Whole30 Meatless Buffalo Burgers


A paleo enthusiast, Whole30, or  vegetarian’s dream! These Whole30 meatless buffalo burgers are EASY to to make with just a handful of 6 simple ingredients.



Ingredients
4 cups riced cauliflower (roughly 1/2 large head of cauliflower)
1/2 cup cooked, mashed sweet potato
2 eggs
3 tablespoons buffalo sauce (or more depending on your heat level)
1/2 cup finely diced yellow onion
1 cup + 2 tbsp almond flour
1/2 teaspoon salt (or more if desired)

Instructions
Preheat oven to 375
Combine the uncooked, riced cauliflower with the mashed sweet potato, eggs, buffalo sauce, yellow onion, almond flour, and salt. Mix well to incorporate the mashed sweet potato evenly
Line a baking sheet with parchment paper and scoop out roughly 1/2 cup of the meatless burger mixture. Gently mold into a patty roughly 1-inch thick then place on the baking sheet – the mixture will be very wet, so handle with care. Patties can also be flattened after placing on the parchment paper
